How To Make : Cakesicles

The week before half-term is always a busy one as we have 2 birthdays to celebrate. With each birthday, I try and make a different cake and this year I gave cakesicles a go. It was really easy to do. If you want to give it a go too, it’s worth scrolling through Pinterest to get some inspiration and then let your creativity loose! Here’s how I made these.

To make 8 cakesicles, you will need:
Plain sponge cake
Buttercream icing
Cakesicles mould
Popsicle sticks
300g white chocolate
100g milk chocolate Edible decorations of your choice
STEP ONE - Turn you cake into crumbs.
For this step, I baked my usual sponge recipe (4oz each Flora, plain flour, sugar, 2 eggs, 2tsp baking powder, 1tsp vanilla extract, 1tblspn milk) a day in advance and then broke it up into crumbs into a bowl on the day.

STEP 2 - Mix in the buttercream.
Here I mixed half a cup of Flora and half a cup of icing sugar to make the buttercream icing and mixed it into the crumbs. I then put this in the fridge to chill until needed.
STEP 3 - Melt the white chocolate.
Using a bain marie (bowl over a saucepan of boiling water), melt the chocolate. Break the slab into pieces for easier melting. I used Green & Black chocolate which has the vanilla flecks showing which I really like.



STEP 4 - Line the mould
Here is the mould I used. Similar can be found on Amazon or eBay - searching cake pop mould or cakesicle mould.

I used a 1/8th cup measuring spoon to add measures of melted chocolate to each cavity and then tilted the mould so the chocolate covered the sides and added in the popsicle sticks. I then put the mould in the freezer to chill for 20 minutes (our freezer is set to -19°, so depending on setting, leave until set).

STEP 5 - Fill the mould
Once the chocolate had set, I filled each space with some of the cake crumb mix and flattened off (as shown in the image above in the first mould space).Then I covered with a layer of white chocolate and then chilled until set. When set, I peeled each cakesicle out of the mould, then I repeated step 4 and 5 until I had 8 cakesicles ready to decorate.
STEP 6 - Decorate
This step is completely down to you! I used some leftover milk chocolate coins from Christmas, melted them down and drizzled over the top and added sugared decor. They tasted so good and made a fun change to a big birthday cake.

You can make them themed, use initials, hearts or edible flowers and when you’re not making cakesicles, you can use the moulds for summer lollies and homemade ice creams - yum!.
